Cuisine: American

Prep Time: 15 minutes

Cook Time: 6 hours in freezer or overnight

Total Time: 6 hours 15 minutes

Servings: 6-8 servings

Prepping:

· Gather all your ingredients.

· Pre-measure your ingredient.

· Make sure your cream cheese is at room temperature.

· Chop your pecans into medium size pieces.

· Chill and grease your jello mold.

· Drain your pineapple pieces.

Ingredients: There are many versions of congeal salad or jello. I made this dish as a dessert recipe, so you will not find any vegetables in it. I used ingredients that you will typically find in any dessert. For this recipe, you will need:

· 6 ounces of green lime jello packet

· 1 ½ cups boiling water

· 1 ½ cups cold water

· 8 oz pineapple pieces can

· ¼ cup chopped pecans

· ¼ cup shredded coconut

· 8 oz bar of cream cheese

· 1 can of coconut oil spray

Instructions:

1. Boil 1 ½ cups water and dissolve the jello packet in it.

2. Add 1 ½ cups cold water and stir. Let the mixture cool or reach room temperature.

3. Once cool, place the jello mixture in the blender and add the room temperature cream cheese. Blend for 1 minute or until thoroughly incorporated.

4. Pour the mixture into a batter bowl and add the nuts, shredded coconut, and some of the pineapples. Fold the ingredients into the jello mixture.

5. Take your jello mold from the fridge and spray it with coconut oil.

6. Place some of the pineapple pieces around the base of the mold.

7. Pour about two ounces of the jello mixture into the mold and chill for 10 minutes.

8. Take a spatula and slowly pour the mixture onto the spatula being as gently as possible, trying not to break the first layer. Pour all the mixture into the jello mold.

9. Cover the mold and place it in the fridge for 6 hours, but preferably overnight.

10. You can top your jello with shredded coconut, pecans, or whip cream.

Topper Tips:

1. Chill and grease your mold well. It will release the jello easily and quickly.

2. Your cream cheese will incorporate into the jello better if it is at room temperature.

3. Blend your cream cheese well into the jello. This will prevent cracking.

4. You can use the oil spray of your choice. I like using coconut oil spray for desserts.

5. If you don’t have pecans, you can use walnuts. They work just as well.
