How To Make Easy & Delicious Green Enchiladas

This recipe is my mother-in-law’s. It is authentic and oh so tasty! I enjoyed how simple it was to put together, and the flavor was out of this world. Your family and friends are sure to love it.

Prepping:

· Pre-measure your ingredients.

· Prepare your green salsa. Refer to our green salsa recipe on our blog.

· Wash and prep your vegetables.


Ingredients: The ingredients for this recipe are few. Don’t let that fool you; the flavor is fantastic! For this recipe, you will need:

· 6 white corn tortillas

· 1 cup of green salsa

· 1 cup white cheddar

· 1/4 of an onion

· 1/2 bunch of coriander


Instructions:

1. Using a low to medium flame, pour a cup of oil into a pan and allow it 5 minutes to heat up.

2. This process is quick. Once the hot oil, place the corn tortilla in the pan. Turn the tortilla after 5 seconds and allow it to heat up for another 5 seconds on the other side. Repeat the process with all your corn tortillas.

3. Place the tortillas on a napkin and let them drip the access oil.

4. Take your cheese and onion and place them in a row in the center of the tortilla and roll them up tightly, placing the edge of the tortilla down so that they do not unroll.

5. Next, plate your enchiladas and drizzle the green salsa over them. You can drizzle as much or as little as you want.

6. After that, finely chop your onion and cilantro.

7. You can top the enchiladas with Mexican cream, onion, cilantro, the cheese of your choice, or anything else that you would like.



Topper Tips:

1. Do not overcook the tortillas, or they will become tostadas.

2. Prepare the salsa a day ahead. Doing this will save you so much time! I keep homemade salsa in the fridge all the time. It helps when making spur-of-the-moment meals.

3. I used corn tortillas; if you use flour tortillas, do not fry them.

4. You can substitute the Mexican cream for beaten sour cream.

5. I did not use any meat for this recipe, but you can top them with chicken or beef.
